Celebration 2012 & Joe's visit ;)

Time to play catch up! Been traveling a lot and busy with summer things. ;) In August, I went to my company's 10 year convention in Phoenix! AMAZING company! Joe flew in from Brooklyn to go with me so he got to see what Isagenix is all about! We had some amazing speakers from our Isagenix millionaires to Jack Canfield, Paul Zane Pilsner, and John Gray. New products were unveiled, new compensation, bonuses, and trips! This company is attracting some of the top people in the health and wellness field as well as the network marketing industry! Definitely a company that knows how to do it right and keep the associates happy! Here's some random pics from throughout the trip ;)

Clearly we ate a lot, but that's what foodies do! Celebration was amazing and so was seeing my boy. Unfortunately I have to wait 4 long months to see him again in December from this past time in August :( Getting closer though, 7 more weeks!
 
Now time for a recipe! I made a Vegan Pot Pie from The Vegan Zombie's site! Soooo good, haven't had one in years. Definitely comfort food.
 
 
Vegan Pot Pie
 
 
Crust
  • 2/1/2 cups flour
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1 tsp thyme
  • 1/4 cup Earth Balance Butter
  • 1 cup Earth Balance Shortening
Whisk dry ingredients then using a pastry cutter, cut in butter and/or shortening. Add cold water 1 tbsp at a time till dough is formed. About a 1/2 cup. Split dough in two equal portions. Wrap each in plastic wrap and place in fridge to chill. Will only need one of the crusts for the recipe unless you want a double crust pie. Up to you!

Filling
  • 1-2 potatoes, cubed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 delicious carrots, chopped
  • 1 package tofu/seitan/tempeh, cut into chunks
  • 8 shiitake mushrooms, sliced
  • 2 cups veggie stock
Saute onions in olive oil in skillet till translucent. Then add remaining ingredients minus the stock. Add in:
  • 1 tsp salt
  • 1 tsp thyme
  • 1/2 tsp chili powder
  • 1 tsp paprika
  • 2 tbsp soy sauce
  • 1 tsp dried parsley
  • 2 tbsp flour to thicken it up
Stir and cook for 2 minutes then add the veggie stock. Bring to a boil, cover and reduce to a simmer for 20 minutes. When you can stick a fork in the potatoes easily it's done. Pour filling into a oven safe casserole dish.

Roll crust out to 1/4" thickness and place on top of casserole dish. Cut excess off, pinch sides, and slit 4-5 times. Bake for 20 min at 350 degrees.
 
 
 
I followed their recipe except I used some chopped up rainbow chard greens instead of mushrooms since I had it on hand. I also only had Earth Balance butter so I used all butter and no shortening for the crust. Turned out great!
 
 
 
 
Note that the crust recipe makes two crusts! So you'll have one to freeze for another pie later :)
